Thursday?!

I can't believe its Thursday already! Sorry for the blog silence but I've been drowning in work and trying to catch up before the weekend!

But tonight, I'm giving myself a break and going out with my girlfriends! Every first Thursday of the month in Portland, art galleries hold receptions and stay open later in the evenings to launch their new show. It's open to the public, and most galleries have food and wine. It's a fantastic way to see art, spend time with friends and roam the streets of Portland!

I recently turned 25 and up until my birthday I was freaking out about being so old, but I have to be honest, I love being 25! It's made me think about my life in a whole new light and I'm able to appreciate all the good things and people in my life. I've never been happier and it can only go up from here! I hope you have an amazing weekend! Remember to embrace and enjoy the people and moments around you... life is truly an amazing thing!

Spiced Applesauce Cake

I've always loved to bake and cook but never really had enough time to find the recipes, buy the ingredients and take the time to make something tasty. But lately, I've found a real joy in cooking. Last night, I decided to make this delicious Spiced Applesauce Cake. It came out deliciously fluffy and tasty! Topped with the cream cheese frosting, its just the right amount of sweet. I even had a little this morning for breakfast!

Being at work and sick on your birthday is no fun! All I want to do is get in my jammies and sleep for hours... but thankfully I get to hang out with my wonderful family and friends tonight and that definitely gives me something to be happy about!
